Chicken and Spicy Black Bean Tacos

Ingredients

  • 15 oz can black beans
  • 1 tbsp + 1 tsp olive oil
  • 10 oz can diced tomatoes with mild green chiles, drained
  • 12 oz chicken breasts
  • 1 1/2 tsp chili powder
  • 12 crisp corn taco shells
  • 3/4 tsp ground cumin
  • Toppings: lettuce, tomatoes, cheese, sour cream

Directions

  1. Coat crock pot with nonstick spray. Add beans and tomatoes with chiles. Blend chili powder, cumin and 1 tsp oil in small bowl; rub onto chicken. Place chicken in crock pot. Cover and cook on HIGH 1.75 hrs.

  2. Remove chicken and slice. Transfer bean mixture to bowl using slotted spoon. Stir in remaining 1 tbsp oil.

  3. To serve, warm taco shells. Fill with equal amounts of beans and chicken.
