Spicy Turkey with Citrus au Jus

Ingredients

  • 4 lb bone-in turkey breast
  • 1/4 tsp pepper
  • 1/2 stick butter, softened
  • 1/4 tsp red pepper flakes
  • Grated peel of 1 lemon
  • 1 tbsp lemon juice
  • 1 tsp chili powder
  • salt

Directions

  1. Coat inside of crock pot with cooking spray. Add turkey breast.

  2. Mix butter, lemon peel, chili powder, 1/4 tsp black pepper and red pepper flakes in small bowl until blended. Spread mixture over top and sides of turkey. Cover and cook on LOW 4-5 hrs.

  3. Remove turkey to cutting board. Cover loosely with foil. Let stand 10-15 minutes.

  4. Stir lemon juice into cooking liquid. Pour mixture through sieve. Let mixture stand 5 minutes. Skim and discard excess fat. Season with salt and pepper. Return au jus to crock pot. Slice turkey and serve with au jus.
