Aebleskiver

Authentic aebleskiver must be cooked in and aebleskiver pan, a specialty pan that looks like a cross between a skillet and a muffin pan or egg poacher.
If you do not own such a thing, you can cook the batter as you would regular pancake batter for silver-dollar pancakes. The resulting pancake won’t be true Aebleskiver, but they’re still tasty.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1 vanilla bean
  • 2 to 3 Tbsp. granulated sugar
  • 2 eggs
  • 2 cups buttermilk
  • 2 Tbsp. butter, melted, PLUS more for drying
  • confectioners' sugar and/or jam, for serving

Directions

  1. Combine the flour and baking soda in a large bowl, set aside.
  2. Using a sharp knife, split the vanilla bean lengthwise and scrape out the seeds. Add the vanilla seeds to the granulated sugar and mix well with your fingers to thoroughly distribute the seeds in the sugar. (The remaining vanilla pod can be added to a bag of sugar to create vanilla sugar; or to make vanilla extract, cut the pod into 1 to 2-inch pieces and add to a lidded jar filled with 2 to 4 oz. of vodka. Close jar and let stand in a cool, dark cupboard for several weeks.)
  3. In a separate bowl, combine the eggs, vanilla sugar, buttermilk and melted butter. Make a well in the flour mixture and add the buttermilk mixture and stir to combine. transfer batter to a spouted measure or pitcher.
  4. Place an aebleskiver pan over medium heat. Add a bit of butter to each well. Fill wells 3/4 full with batter and cook, until golden, gently turning the batter as it cooks using the tines of two forks.
  5. Alternately, cook batter like traditional pancakes on a hot griddle, but use only a tablespoon or so of batter per pancake.
  6. Serve warm with confectioners’ sugar and fruit jam.
