Blueberry Sweet Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/3 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup fresh or frozen blueberries
  • 2 Tbsp. sugar

Directions

  1. Combine first 4 ingredients in a large bowl; make a well in center of mixture.
  2. Stir together milk, oil and egg; add to dry ingredients, stirring just until moistened. fold in blueberries. Spoon into greased muffin pans, filling 2/3 full. Sprinkle batter evenly with 2 Tbsp. sugar.
  3. Bake at 400 degrees for 20 to 25 minutes or until muffins are golden. Remove from pans immediately, an cool on wire racks.
  4. makes 6 muffins

  5. Note: Muffins may be frozen up to 1 month. thaw them at room temperature for 2 hours.
