Veggie Wild Rice

Ingredients

  • 1 (14oz.) can vegetable broth
  • 3/4 cup water
  • 1 (6oz.) pkg. long-grain and wild rice mix
  • 3 Tbsp. chopped walnuts
  • Vegetable cooking spray
  • 1/2 medium-sixe red bell pepper, chopped
  • 1 cup sliced mushrooms
  • 1 garlic clove, minced
  • 3 green onions, sliced
  • 1/4 tsp. salt
  • 1/2 tsp. freshly ground pepper

Directions

  1. Bring broth and 1/4 cup water to a boil in a medium saucepan; add rice mix, discarding seasoning packet. Cover, reduce heat, and simmer 30 minutes.
  2. Saute walnuts in a large nonstick skillet coated with cooking spray over medium-high heat 5 minutes. Remover from pan; set aside. Add bell pepper, mushrooms, and garlic to skillet coated with cooking spray; sauté over medium-high heat 5 minutes or until tender.
  3. Stir in cooked rice, green onions, salt, and pepper; sprinkle with walnuts. Serve Immediately.
