Apple Cinnamon Whole Wheat Muffins

Ingredients

  • Cooking spray
  • 1 cup Pillsbury Best All Purpose flour
  • 1 cup Pillsbury Bet Whole Wheat flour
  • 1/2 cup sugar
  • 1 Tbsp. ground cinnamon
  • 1/2 tsp. salt
  • 2 cups peeled and shredded apples (3 medium)
  • 1/2 cup shredded carrot
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup shredded coconut (optional)
  • 1/2 cup Crisco Pure Vegetable Oil
  • 1/4 cup milk
  • 2 large eggs
  • 2 tsp. vanilla extract

Directions

  1. Heat oven to 350 degrees. Line 12 muffin cups with paper baking cups or coat with non-stick cooking spray.
  2. Combine flours, sugar, baking soda, cinnamon and salt in large bowl. Add apples, carrot, raisins, walnuts and coconut. Mix well, add oil, milk, eggs and vanilla. Stir just until moistened. Fill muffin cups 3/4 full.
  3. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Immediately remove from pans.
