Tutti-Fruity Chicken Kabobs

Ingredients

  • 4 Tyson Holly Farms boneless, skinless chicken breasts
  • 1/2 cup vegetable oil
  • 1/2 cup honey
  • 1 Tbsp. chopped fresh ginger
  • 1 Tbsp. soy sauce
  • 1 fresh pineapple, cut into 1-inch cubes
  • 3 oranges, peeled, quartered and cut into 1-inch pieces
  • 2 red bell peppers, seeded and cut into 1-inch pieces
  • Instant brown rice

Directions

  1. Rinse chicken with cold water and pat dry with paper towels. Cut into 1-inch pieces. combine oil, honey, ginger and soy sauce in large bowl. Set aside 1/4 cup of marinade for basting. Place chicken in remaining marinade, cover and refrigerate for 3 hours.
  2. When ready to cook, heat grill or broiler. prepare rice according to package directions and set aside. Thread chicken, peppers and fruit onto skewers. Grill or broil kabobs for 5 minutes; baste with reserved marinade. Turn and broil 5 minutes more or until chicken is done. Serve kabobs with rice. Refrigerate leftovers.
