Bearnaise Mayonnaise

Ingredients

  • 1/3 cup dry white wine
  • 1 Tbsp. white wine vinegar
  • 2 shallots, minced
  • 1 cup mayonnaise
  • 2 Tbsp. chopped fresh tarragon
  • 1 tsp. grated lemon rind
  • 1/8 tsp. pepper
  • Garnish: fresh tarragon sprig

Directions

  1. cook first 3 ingredients over medium-high heat 5 minutes or until liquid is reduced to 1 Tbsp. Remove from heat, and cool.
  2. Stir together mayonnaise and next 3 ingredients; stir in wine reduction. Cover and chill up to 7 days. Garnish, if desired.

  4. Tomato-Basil Mayonnaise:

  5. Stir together 1 cup mayonnaise, 2 Tbsp. tomato paste, and 2 Tbsp. chopped fresh basil until blended.
  6. Gremolata Mayonnaise:

  7. Stir together 1 cup mayonnaise, 2 Tbsp. chopped fresh parsley, 2 Tbsp. grated lemon rind, and 1 garlic clove, pressed.
