Pork Chop Skillet Dinner

Ingredients

  • 1 tbsp olive oil
  • 4 bone-in pork chops
  • 1 medium onion, chopped
  • 1 cup uncooked long grain white rice
  • 10.5 oz can condensed chicken broth
  • 1 cup orange juice
  • 3 tbsp chopped parsley
  • 4 orange slices

Directions

  1. Heat the oil in a 10-inch skillet over medium-high heat. Add the pork chops and cook for 10 minutes or until browned on both sides. Remove the pork chops and set aside.

  2. Reduce heat to medium. Stir the onion and rice into the skillet. Cook and stir until the rice is browned. Stir the broth, orange juice and 2 tbsp of parsley into the skillet. Heat to a boil.

  3. Return pork chops to the skillet and reduce heat to low. Cover and cook for 20 minutes or until the pork is cook through and the rice is tender. Top with orange slices and sprinkle with remaining parsley.
