Greek-Style Beef Stew

Ingredients

  • 2-2.5 lbs boneless beef bottom round, cut into 1-inch pieces
  • 16 oz bag frozen small white onions
  • 16 oz bag baby carrots
  • 2 tbsp flour
  • 1.75 cups Swanson Beef broth
  • 5.5 oz can V8 Vegetable juice
  • 1 tbsp brown sugar
  • Bouquet Garni***
  • Hot buttered noddles

Directions

  1. Place the beef, onions and carrots in crock pot. Sprinkle with the flour and toss to coat.

  2. Stir the broth, V8 and brown sugar in a shallow bowl. Pour over the beef and vegetables. Submerge the Bouquet Garni into the broth mixture.

  3. Cover and cook on LOW 8-10hrs. Remove the Bouquet Garni. Serve over the noodles.


  4. Bouquet Garni: Lay a 4-inch square of cheese cloth flat on counter. Place 1/2 tsp whole cloves, 1 cinnamon stick and 1 bay leaf in center of cloth. Bring the corners of the cheese cloth together and tie with kitchen string into a bundle.
