Buttermilk Fried Chicken

Ingredients

  • 2 lbs chicken breasts
  • 3 cups buttermilk
  • coarse salt
  • black pepper
  • 4 eggs beaten
  • 3 cups flour
  • 4 cups vegetable shortening, for frying

Directions

  1. Place the chicken pieces skin side down in a shallow container and pour the buttermilk over them.

  2. Cover with plastic wrap and marinate in the fridge for at least 6 hrs.

  3. eheat over to 375.

  4. Remove the chicken from the buttermilk and season both sides with salt and pepper.

  5. Place the beaten eggs and flour in separate, shallow bowls. Dredge the chicken in flour, then egg and flour again.

  6. In a 12-inch saute pan with deep sides, melt enough shortening to fill 2-inches in depth. Heat pan until oil begins to smoke.

  7. Fry the chicken for 2 minutes on each side.

  8. Transfer to a baking sheet and bake for 15 minutes.
