Jerk-Style Smoked Chicken

Ingredients

  • 3 lbs chicken breasts
  • 1/2 cup tomato juice
  • 1/3 cup chopped onion
  • 2 tbsp water
  • 2 tbsp lime juice
  • 1 tbsp cooking oil
  • 1 tbsp Pickapeppa sauce
  • 1/2 tsp salt
  • 4 garlic cloves, minced
  • 6/8 fruit wood chunks
  • 1-2 tsp Jamaican jerk seasoing
  • Lime wedges

Directions

  1. Place chicken in a plastic bag. For marinade, in a bowl combine tomato juice, onion, water, lime juice, oil, Pickapeppa sauce, salt and garlic. Pour over chicken; seal bag. Marinate in the fridge for 1-4 hrs, turning bag occasionally.

  2. At least 1 hr before smoking, soak wood chunks in water. Drain chicken, discarding marinade. Sprinkle jerk seasoning evenly over chicken; rub in.

  3. In a smoker, place chicken, bone sides down, on the grill rack over water pan. Cover and smoke for 1 1/2-2 hrs (170). Serve chicken with lime wedges.
