Pulled Pork with Root Beer Sauce

Ingredients

  • 2 1/2-3 lb pork sirloin roast
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp cooking oil
  • 2 medium onions, cut into thin wedges
  • 1 cup Root Beer
  • 6 garlic cloves, minced
  • 3 cups Root Beer
  • 1 cup bottled chili sauce
  • 1/4 tsp root beer concentrate
  • several dashes hot sauce
  • 8-10 hamburger buns

Directions

  1. Trim fat from meat. Sprinkle with salt and pepper. In a large skillet, brown meat on all sides in hot oil. Drain off fat. Transfer meat to cooker. Add onion, 1 cup root beer and garlic.

  2. Cover and cook on LOW 8-10 hrs.

  3. Meanwhile, for sauce, in a saucepan stir together 3 cups root beer and chili sauce. Bring to boiling; reduce heat. Simmer, uncovered, stirring occasionally, about 30 minutes. Add root beer concentrate and hot sauce.

  4. Transfer meat to cutting board. Pull meat apart into shreds. Using a slotted spoon, transfer onion to serving platter. Place meat and onion on rolls. Drizzle meat with root beer sauce.
