Pastina with Ricotta

Ingredients

  • 1/2 cup pastina
  • salt
  • 1/4 cup Ricotta
  • 1 tsp unsalted butter

Directions

  1. Bring about 4 cups of water to a boil. Add the pastina and cook. Cook until pastina is tender, about 5 minutes.

  2. Scoop out some of the cooking water. Drain the pastina and place it in a bowl with the ricotta and butter. Mix well, adding a little of the cooking water.
