Cajun-Style Country-Fried Steak

Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 cup yellow cornmeal
  • 1 1/2 tsp. Cajun seasoning
  • 6 (4oz.) cube steaks
  • Canola or vegetable oil
  • 1 (2.64 oz.) pkg. McCormick Original Country Gravy mix (or make your own)
  • 3 cups milk
  • 3/4 to 1/2 ground red pepper

Directions

  1. Combine first 3 ingredients in a shallow dish; dredge steaks evenly in flour mixture.
  2. Fry steaks, in batches, in 1/4-inch hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes on each side or until golden. Remove steaks, and keep warm. Carefully drain hot oil, reserving 2 Tbsp. drippings in skillet.
  3. Whisk gravy mix, milk, and ground red pepper into reserved drippings in skillet; cook over medium-high heat, whisking constantly, 3 to 6 minutes or until thickened. Serve gravy with steaks.
  4. Note: Gravy will thicken upon standing. To thin gravy, stir in 1/3 to 1/2 cup milk or enough to reach desired consistency.
