Bacon Sage Potatoes

Ingredients

  • 1/4 lb smoked bacon, diced
  • 2 oz unsalted butter
  • 2 1/2 lbs Yukon Gold potatoes, scrubbed and cut into 1-inch pieces
  • 4 tbsp chopped sage
  • 1/2 cup milk
  • salt and pepper

Directions

  1. Cook the bacon in a small skillet until fat is rendered and bacon is browned and crisp.

  2. Put the potatoes in a large pot with water to cover them by 1 inch and boil for 20 minutes. Drain potatoes well and return them to pot.

  3. Add the butter, sage, milk and bacon to the pot. Mash potatoes well with a potato masher. Reheat them over medium; season well with salt and pepper.
