Beef Gyros

Ingredients

  • 1 large sweet onion, cut into thin wedges
  • 2 lbs ground beef
  • 2 tsp dried oregano
  • 3 garlic cloves, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 6 pitas
  • 3 Roma tomatoes, sliced
  • 1/3 cup crumbled feta
  • 1 recipe Tzatziki***

Directions

  1. Place onion in slow cooker. In a large bowl, combine beef, oregano, garlic, salt, pepper and paprika.

  2. On waxed paper, shape meat mixture into a 5-inch round loaf. Crisscross three 18×2-inch foil strips. Please meat loaf in center of strips. Bringing up foil strips, lift and transfer meat and foil to the slow cooker over the onion. Press the meat away from the side of slow cooker to avoid burning.

  3. Cover and cook on LOW 4-5 hrs.

  4. Using foil strips, carefully lift meat from the slow cooker and transfer to a cutting board. Let stand for 10 minutes before thinly slicing.

  5. Divide sliced meat and onion among pitas. Top with tomatoes, feta and Tzatziki.


  6. Tzatziki: In a medium bowl stir together 6 oz Greek yogurt, 1 cup shredded seeded cucumber, 1 tbsp lemon juice, 1 tbsp snipped fresh dill weed, 1 tsp honey, 1 minced garlic clove, and 1/4 tsp salt. Cover and chill for up to 4 hrs.
