Jalapeno Cheeseburger

Ingredients

  • 2 tbsp ketchup
  • 2 tbsp relish
  • 1 tbsp olive oil mayo
  • salt and pepper
  • 1 lb ground beef
  • 1 cup shredded Pepper Jack
  • 1 cup caramelized onions*
  • 1/4 cup Pickled Jalapenos**
  • 4 potato buns, split

Directions

  1. Combine the ketchup, relish and mayo in a mixing bowl. Season with salt and pepper and set aside.

  2. Preheat a grill. Combine the ground beef with salt and pepper and mix gently. Form into 4 patties.

  3. When the grill is hot, add the patties. Cook on the first side for 5-6 minutes, until a nice crust develops. Flip and immediately top with the cheese. Cook for another 2-3 minutes, until the cheese is melted and burgers are firm. Remove the burgers. While grill is still hot, toast the buns.

  4. Slather the bottom buns with the reserved spread, then top each with a burger, caramelized onions, and pickled jalapenos. Crown with the bun tops and serve.

  5. *Caramelized onions: Heat 1 tbsp olive oil in a large saute pan over medium-low heat. Add 2 large red onions, sliced, and salt, cover and cook until soft and caramel.

  6. **Pickled Jalapenos: Cut 8-10 jalapenos into thin slices. Combine 1 cup cider vinegar, 1 cup water, 1 tbsp salt and 1 tbsp sugar in a saucepan and heat just enough so salt and sugar dissolve. Allow liquid to cool briefly. Place the jalapenos in a small mixing bowl. Pour liquid over them, then cover, letting them soak for at least 10 minutes before using.
