Jerk Pork

Ingredients

  • 2 habanero peppers, stemmed and roughly chopped
  • 8 scallions, chopped
  • Juice of 2 limes
  • 2 tbsp canola oil
  • 3 garlic cloves, chopped
  • 1 tsp allspice
  • 1/4 tsp nutmeg
  • salt and pepper
  • 1 lb pork loin

Directions

  1. Place the habaneros, scallions, lime juice, oil, garlic, allspice, nutmeg and salt and pepper in a food processor. Pulse until the mixture forms a paste.

  2. Place the pork in a ziploc bag and pour the jerk marinade over it. Seal and rub pork around to make sure it’s evenly coated. Marinate in fridge overnight.

  3. Preheat grill. Remove pork from marinade and season with more salt and pepper. Grill, cooking on all sides, for about 10 minutes, until lightly charred and cooked through.
