Cauliflower and Carrot Stir-fry

Ingredients

  • 3 Tbsp. vegetable oil
  • 1/2 head cauliflower, cut in small florets
  • 3 carrots, sliced diagonally
  • 2 scallions, sliced diagonally
  • 1 Tbsp. lemon juice
  • 1/4 tsp. dill weed
  • 1/4 tsp. salt

Directions

  1. Heat oil in wok until hot. Stir-fry cauliflower and carrots until crisp and tender, about 3 minutes. Add scallions; continue to cook 1 minute. Add lemon juice, dill weed and salt. Stir until well coated.
