Beef Sandwiches with Aioli

Ingredients

  • 2 1/2-3 lb boneless beef chuck roast
  • salt and pepper
  • 1 medium onion, chopped
  • 1/2 cup water
  • 3 tbsp Worcestershire
  • 1 tsp dried oregano
  • 3 garlic cloves, minced
  • Kaiser rolls, split and toasted
  • 1 recipe Avocado Aioli***
  • 1 cup shredded lettuce

Directions

  1. Trim fat from meat. Sprinkle with salt and pepper. Place meat in cooker. Add onion, water, Worcestershire, oregano and garlic.

  2. Cover and cook on LOW 8-10 hrs. Remove meat from cooker, reserving juices. Using two forks, shred the meat. Serve meat on rolls with Avocado Aioli and shredded lettuce. If desired, drizzle meat with some of the reserved juices to moisten.


  3. Avocado Aioli: In a small bowl slightly mash 2 seeded and peeled ripe medium avocados with a fork. Stir in 2/3 cup finely chopped radishes; 2 tbsp mayo; 1 tbsp lemon juice; 1 garlic clove, minced; 2 tsp snipped fresh oregano and 1/4 tsp salt. Cover and refrigerate for up to 24 hrs.
