Salmon Loaf

Serves 6 people

Ingredients

  • 1 can (14.75 oz.) Artic Star Pink Salmon
  • 2 cups soft bread crumbs
  • 1/3 cup finely minced onion
  • 1/4 cup milk
  • 2 eggs
  • 2 Tbsp. minced parsley
  • 1 Tbsp. lemon juice
  • Dash pepper

Directions

  1. Drain salmon, reserving 2 Tbsp. liquid; flake. Combine all ingredients. Place in well-greased 8 1/2 × 4 1/4 × 2 1/2-inch loaf pan or shape into loaf on greased baking sheet. Bake at 350 degrees for 45 minutes.
  2. Salmon patties: Prepare salmon mixture as above. Shape into 8- 1-inch patties. Pan-fry on both sides in 2 Tbsp. oil or butter until golden brown.
