Chicken Gumbo

Ingredients

  • 1 chicken, cut up
  • 1 cup onion, chopped
  • 1 cup ham (or sausage), chopped
  • 2 Tbsp. parsley, minced
  • 1 small bay leaf
  • water
  • salt to taste
  • pepper to taste
  • file (powdered sassafras leaf)
  • 2 Tbsp. fat 2 Tbsp. flour

Directions

  1. Fry chicken and sausage or ham in fat. Remove when brown: add flour to the grease left in the pot. When this is golden brown, add onion. cooking until transparent. Add chicken, sausage and enough boiling water for the amount of gumbo desired. Let cook slowly until chicken is thoroughly done. Add seasoning (bay leaf, parsley, pepper) and simmer about 10 minutes. Just before serving, sprinkle 1 tsp. file into each serving bowl. (Should you want to add oyster, 50 oysters and the oyster juice may be added after the chicken is done. Cook only until oysters curl at edges.)
