Asian Style Cabbage Salad

Very tasty dressing on this salad
Could add grated carrot, finely sliced celery if wished

Prep time: 15 minutes
Cook time: 5 minutes
Serves 6 people

Ingredients

  • 1/4 cabbage, either savoy or chinese cabbage, sliced finely
  • 4 spring onions, sliced
  • 4 T slivered almonds, toasted
  • packet of dried noodles
  • 1/4 C white vinegar
  • 1/4 C caster sugar
  • 1 T soy sauce
  • 2 t sesame oil
  • 1/2 C olive or rice bran oil

Directions

  1. Place cabbage, spring onions, noodles and almonds in large bowl.

  2. Mix remaining dressing ingredients in a small saucepan, and stir gently over a low heat until sugar dissolves.

  3. Cool dressing mixture.

  4. Pour over tossed salad ingredients.

  5. Serve as a side dish.
