Potatoes with Rosemary

Ingredients

  • 1 tbsp corn oil
  • 2 oz double-smoked slab bacon, cut into small dice
  • 1 lb tiny new potatoes, scrubbed
  • 1/2 tsp dried rosemary
  • 1/4 tsp black pepper
  • 3 medium yellow onions, peeled and chopped
  • 2 large garlic cloves, peeled and minced
  • 1/2 tsp salt

Directions

  1. Preheat oven to 400.

  2. Heat the oil for 1 minute over moderate heat in a heavy 12-inch skillet with a heatproof handle. Add the bacon, reduce the heat to moderately low, and saute about 5 minutes, stirring often, until translucent. Add the potatoes, rosemary, and pepper and toss well to mix. Cover snugly with foil, transfer to the oven, and bake 30 minutes. Remove from the oven, discard foil and add the onions, garlic and salt. Stir well, return to the oven, and bake, uncovered, for 15 minutes, stirring every 5 minutes, until the onions are golden brown. Serve at once.
