Chipotle- Marinated Flank Steak

Ingredients

  • 1/3 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 1 Tbsp. packed brown sugar
  • 2 tsp. minced chipotle chiles in adobo sauces PLUS 2 Tbsp. adobo sauce
  • 1 tsp. grated lime zest
  • 2 (1 lb.) flank steaks
  • Coarse salt to taste

Directions

  1. Combine lime juice, cilantro, brown sugar, chiles, adobo sauce, garlic and zest in a large resealable bag. Add steaks; turn to coat. Marinate in refrigerator 6 hours to overnight.
  2. Remove steaks; discard marinade.

  3. Grill on medium heat 11 to 21 minutes for medium-rare to medium (145 to 160 degrees). Turn occasionally. Remove from grill; let stand 5 minutes. Carve across grain into thin slices. Season with salt as desired.
