Chocolate Crunch

Ingredients

  • Vegetable oil spray or butter for coating dish
  • 1 1/2 lb. bittersweet or semisweet chocolate, chopped
  • 1/2 cup butter, cut into 8 pieces
  • 2 heaping Tbsp. peanut butter
  • 1 Tbsp. honey
  • 4 cups crisped rice cereal

Directions

  1. Coat a 9-inch baking dish with vegetable oil spray or butter; set aside.
  2. In the top of a double boiler set over barely simmering water, melt the chocolate and butter, stirring until smooth. Add the peanut butter and honey and stir until smooth.
  3. Place the crisped rice cereal in a large mixing bowl. Pour in chocolate mixture and, using a heat-safe rubber spatula, gently stir to thoroughly coat cereal in chocolate mixture. Pour mixture into the prepared baking dish and smooth top.
  4. Let cool to room temperature, then cover and refrigerate until chocolate is set, about 2 hours.
  5. Cut into 1 1/2 to 2-inch squares.
