Classic Applesauce

Ingredients

  • 3 lbs. tender-sweet and tender- tart apples such as Gala, Cripps Pink, Jonathan and McIntosh
  • 1/4 cup apple cider

Directions

  1. Core the apples, but do not peel, then cut into large chunks.
  2. Combine apples and cider in a large pot such as a Dutch oven, over medium-high heat and cover. When the mixture beings to produce vigorous steam, reduce heat to medium-low, and cook, stirring occasionally, until apples are quite tender and can be mashed with the back of a wooden spoon, 15 to 20 minutes.
  3. Process apples through a food mill. Thin with water or additional cider to desired consistency.
  4. makes about 3 cups.
