Italian Vegetable Stew

Serves 4 people

Ingredients

  • 1 Tbsp. olive oil
  • 3 cups diced potatoes
  • 2 cups diced onion
  • 1 tsp. minced garlic
  • 2 cups sliced zucchini
  • 1 (14.5 oz.) can undrained diced tomatoes with basil, garlic and oregano
  • 1 cup unsalted vegetable broth
  • 1 tsp. dried basil
  • coarse sat and pepper to taste

Directions

  1. In a Dutch oven, heat olive oil on medium. Add potatoes, onion, and garlic and cook 10 minutes or until potatoes are lightly browned and onions are softened. Add zucchini, tomatoes and basil. Cover and simmer 10 minutes, add salt and pepper to taste.
