Cooked Red Cabbage

Juniper berries located among the herbs and spices in the grocery store. use in sauerkraut and preserves as well as game and pork.

Ingredients

  • 2 Tbsp. butter or margarine
  • 1 onion, diced
  • 1 red cabbage, shredded
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 apple, peeled and chopped
  • 2 Tbsp. lemon juice
  • 1 bay leaf
  • 1 dried juniper berry

Directions

  1. Melt butter in a large Dutch oven; add onion, and sauté until golden. Add cabbage, salt and pepper; sauté 2 minutes. Stir in apple and remaining ingredients; cover, reduce heat, and simmer, stirring occasionally, 1 hour. Serve immediately.
