Country-Fried Steak in Paradise

Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 3/4 tsp. salt, divided
  • 1 tsp. ground black pepper, divided
  • Pinch of ground red pepper
  • 1/8 tsp. garlic powder
  • 1 lb. cubed sirloin steak
  • 2 Tbsp. bacon drippings
  • 2 Tbsp. all-purpose flour
  • 2 cups milk

Directions

  1. Stir together 1/2 cup flour, cornstarch, 1/2 tsp. salt, 1/2 tsp. pepper, red pepper, and garlic powder in a shallow dish.
  2. Cut steak into 4 pieces, and dredge in flour
  3. mixture.

  4. Heat bacon drippings in a large cast-iron skillet until hot. Add steak, and cook 3 to 5 minutes or until browned, turning once. Cover, reduce heat, and cook 15 minutes. Uncover and cook 10 minutes or until crisp, turning once. Drain on paper towels, reserving drippings in skillet; transfer steak to serving platter.
  5. Heat reserved drippings in skillet; whisk in 2 Tbsp. flour, and cook, whisking constantly, 3 to 5 minutes or until thickened. Stir in remaining 1/2 tsp. pepper. Serve gravy with steak.
