Cream Cheese Mashed Potatoes

Ingredients

  • 2 1/2 lbs. baking potatoes, peeled and quartered
  • 1/2 (8 oz.) pkg. fat-free cream cheese, softened
  • 1 1/2 tsp. sugar
  • 1 tsp. garlic salt
  • 1/2 to 1 tsp. pepper
  • Vegetable cooking spray

Directions

  1. Cook potatoes in boiling water to cover in a Dutch oven 25 minutes or until tender. Drain.
  2. Beat potatoes, fat-free cream cheese, and next 4 ingredients in a large mixing bowl at medium speed with an electric mixer until fluffy. Spoon potato mixture into 9-inch square baking dish coated with vegetable cooking spray.
  3. Bake at 325 degrees for 30 minutes or until thoroughly heated.
