Cheesy Chicken Rolls

Ingredients

  • 1 cup shredded cooked chicken
  • 3 slices bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese, plus more for sprinkling
  • 2 green onions. trimmed and finely chopped
  • 1 chile pepper, such as Fresno or Jalapeno, minced optional
  • 1/4 tsp. ground red pepper (cayenne), optional
  • 1 Tbsp. ranch dressing mix
  • 1 (12-roll) pkg. King's Hawaiian rolls
  • 2 Tbsp. butter, melted

Directions

  1. Heat oven to 325 degrees.
  2. In a medium bowl, combine the chicken, bacon, cheese, green onion, chile cayenne and ranch dressing mix and mix well.
  3. Remove outer packaging from rolls, but do not remove rolls from tray or separate rolls. Place tray on a foil-or -parchment-lined baking sheet.
  4. Cut a slit in the top of each roll and gently
  5. open with your fingers to create a pocket. Spoon chicken mixture into the opening in each roll. Drizzle melted butter over rolls. Sprinkle with cheese. Lightly tent rolls with foil.

  6. Bake 10 minutes or until rolls are heated through and the cheese is melted
  7. makes 12 sandwiches
