CHEDDAR BURGERS WITH BAKED ONION RINGS

  • 1 tablespoon olive oil
  • 1 tablespoon water
  • 1 egg
  • 12 ounces yellow onions, divided
  • 4 sprigs tarragon
  • 12 ounces ground beef
  • 1 teaspoon Worcestershire sauce, divided
  • 1 cup flour
  • 1 tablespoon sweet paprika
  • 2 cups panko bread crumbs
  • 2 slices Cheddar cheese
  • 1 1/2 tablespoons mayonnaise
  • 1/2 tablespoon ketchup
  • 1 teaspoon red wine vinegar
  • 2 brioche buns

Directions

  1. Preheat oven to 450°F. Peel onions. Finely grate or mince 1 onion and slice remainder into ¼-inch rings. Rinse tarragon and finely chop leaves, discarding stems. Pat beef dry with paper towel. In a large bowl, combine 1 tablespoon grated onion, beef, half of Worcestershire sauce, salt, and pepper. Divide mixture evenly and form into 2 patties, creating a dimple on top of each. Whisk 1 egg.

  2. In a large resealable plastic bag, place flour and sweet paprika; in another, place whisked egg and 1 tablespoon water; in the last, place panko bread crumbs. Add onion rings to flour bag and shake to coat. Remove, shake off excess, then add to egg bag and shake to coat. Remove, shake off excess, then add to panko bag and shake to coat, being sure all rings are separated and coated evenly.

  3. Remove coated onion rings from bag and on a parchment-lined baking sheet, arrange in a single layer, (you may need several pans). Season with salt and pepper. Bake until golden and crisp, flipping halfway through, 15-18 minutes.

  4. Meanwhile, heat 1 tablespoon olive oil in a large pan over medium heat. When oil is shimmering, add burgers and cook until browned on bottom, about 6 minutes. Flip, lay sliced Cheddar on top, and continue cooking until medium inside and cheese has melted, about 6 minutes more. Remove from pan and set aside.

  5. While burgers cook, in a medium bowl, combine ½ tablespoon grated onion, tarragon, remaining Worcestershire sauce, mayonnaise, ketchup, and red wine vinegar. Taste and add salt and pepper as needed. Set aside. Discard any remaining grated onion.

  6. Wipe pan from burgers clean and place over medium heat. Add brioche buns cut-side down and cook until toasted, about 2 minutes. Spread dressing on tops and bottoms of buns, then assemble with burgers. Serve with onion rings alongside.
