“Juicy Lucy” Stuffed Beef Burger With American Cheese and Seasoned Salt Fries

  • 1 Red Onion
  • 1 Tomato
  • 2 Russet Potatoes
  • 1 tsp. Seasoning Salt
  • 12 oz. Ground Beef
  • 1 tsp. Worcestershire Sauce
  • 3 American Cheese Slices
  • 2 Brioche Bun
  • 1/4 oz. Baby Arugula
  • 6 Pickle Slices

Directions

  1. Preheat oven to 400 degrees and prepare two baking sheets with foil or use two non-stick baking sheets. Throughly rinse produce and pat dry. Peel and slice onion into ¼" rounds. Slice tomato into ¼" rounds. Cut potatoes lengthwise into thick “steak” fries. (For extra-crispy fries, place potatoes in a bowl and cover with cold water, then rinse to remove excess starch before baking.)

  2. In a mixing bowl, toss potato wedges with 2 tsp. olive oil, seasoning salt, and a pinch of salt and pepper. Arrange wedges on the baking sheet and bake for 22-27 minutes, turning halfway through, until golden brown. Remove from oven and allow to cool for 5 minutes on the pan so they get crispy, then transfer to a plate.

  3. While fries are baking, combine beef, Worcestershire sauce, and ¼ tsp. each of salt and pepper in a mixing bowl. Mix well and form into 4 equal patties (about ½" thick and 4" in diameter). Slice cheese slices in half, stack them 3 deep, and place in the middle of two of the burger patties. Place the two other patties on the cheese-topped patties, and seal edges by pinching lightly. Be sure to form a tight seal around the cheese so it stays inside the burger while cooking.

  4. Warm a grill pan or outdoor grill to medium-high heat and lightly coat with cooking spray. Grill burgers on one side for 5-6 minutes, turn and cook for another 5-6 minutes, or until a minimum Internal temperature of 160 degrees is reached.

  5. Place buns on second prepared baking sheet, and bake until warm, about 3-4 minutes. Alternately, you can use a toaster or place buns directly on the grill pan or outdoor grill to save dirtying another dish.

  6. Place a toasted bun on the plate. Top bottom bun with arugula, red onion, and tomato slices. Place burger on top, and crown with the top bun. Arrange a pile of potato wedges and pickles on the side. A note of caution: Before biting into the burger, be aware that the cheese inside is very hot! We like to slice ours in half to cool it down.
