Beef with Green Peppers and Tomatoes

Ingredients

  • 2 Tbsp. oil
  • 1 clove garlic, peeled and crushed
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1/2 tsp. peeled and minced fresh gingerroot
  • 1 lb. round steak, fat trimmed, thinly sliced and cut in 1 1/2 inch long strips
  • 1/4 cup soy sauce
  • 1/2 tsp. sugar
  • 2 green peppers, cored, seeded and cut in thin 1 1/2-inch long strips
  • 2 tomatoes, cored and quartered
  • 3 Tbsp. cornstarch mixed with 1/4 cup cold water
  • hot cooked rice

Directions

  1. Heat oil in wok until hot. Add garlic salt, pepper and gingerroot; stir-fry 2 minutes.
  2. Add soy sauce, sugar, green peppers; cornstarch mixture; stir-fry until sauce thickens slightly. Serve immediately with hot cooked rice.
