English Muffin French Toast

Ingredients

  • 1 cup egg substitute
  • 1 cup fat-free milk
  • 1 tsp. vanilla extract
  • 6 English muffins, split
  • Vegetable cooking spray
  • Chopped kiwi, blueberries, nectarines, strawberries (optional)
  • Garnish: fresh mint sprigs

Directions

  1. Stir together egg substitute, milk, and vanilla. Place in a gallon-size zip-top plastic bag; add English muffins. Seal and chill 8 hours, turning occasionally. Remove muffins from bag, discarding remaining liquid.
  2. Cook English muffins, in batches, in a large skillet coated with cooking spray over medium-high heat 2 to 3 minutes on each side or until muffins are golden. Serve with light pancake syrup and, if desired, kiwi, blueberries, nectarines, and strawberries. Garnish, if desired.
