Cheddar & IPA Beignets

Ingredients

  • 1/2 cup flour
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/4 cup milk
  • 1/4 cup of your favorite local IPA
  • 1/4 cup butter, cubed
  • ⅔ cup shredded sharp cheddar cheese
  • 2 eggs, at room temperature
  • 1 tablespoon chives, chopped
  • Frying oil (such as canola oil)

Directions

  1. Fill a deep pot half way with frying oil.

  2. Heat to 350°F while prepping dough.

  3. Mix dry ingredients together and set aside. Heat milk, beer, and butter together in a wide sauté pan or sauce pot.

  4. Pour in dry ingredients.

  5. Stir with a rubber spatula to combine.

  6. Continue to cook until ingredients are fully combined and a dough ball forms, about 3 minutes.

  7. Take off heat.

  8. Move dough ball to a mixing bowl.

  9. Incorporate cheddar using a spatula.

  10. Add the eggs one at a time, then mix in the chives.

  11. Gently stir until well combined, being careful not to overwork.

  12. Using a small ice cream scoop or spoon, drop roughly a tablespoon size dollop of dough into the frying pot.

  13. Fry until golden brown.
