Fried Catfish

Ingredients

  • 5 large eggs
  • 1 cup milk
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 (1 lb.) pkg. saltines
  • 8 catfish fillets (3 1/2 to 4 lbs.)
  • Vegetable oil

Directions

  1. Whisk together first 4 ingredients; set aside. Process crackers in a food processor until finely crushed.
  2. Dip fish in egg mixture; dredge in cracker crumbs.
  3. Pour oil to a depth of 5 inches in a Dutch oven; heat to 375 degrees. Fry fish, in batches, 4 to 6 minutes on each side or until fish flakes with a fork. Drain on paper towels.
