Flank Steak with Chili Butter

Ingredients

  • 1 (2 lb.) flank steak
  • Southwestern Marinade
  • Chili Butter
  • Garnish: red jalapeno peppers
  • Southwestern marinade:
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 2 Tbsp. hopped fresh cilantro
  • 1/2 cup olive oil
  • 1/4 cup lime juice
  • 2 Tbsp. Worcestershire sauce
  • 2 tsp. sugar
  • 1 tsp. salt
  • 1 tsp. ground cumin
  • 1 tsp. pepper
  • Chili Butter:
  • 1 cup butter or margarine, softened
  • 1 garlic clove, minced
  • 2 Tbsp. chili powder
  • 1/4 tsp. ground cumin
  • 1/4 tsp. hot sauce

Directions

  1. Place flank steak in a shallow dish or heavy-duty zip-top plastic bag and add Southwestern marinade. Cover or seal and chill 8 hours, turning occasionally.
  2. Remove steak from marinade discarding marinade.
  3. Grill, covered with grill lid, over medium-high heat (350 to 400 degrees) 7 to 8 minutes on each side or to desired degree of doneness. Cut steak diagonally across the grain into thin strips. Serve with Chili Butter. Garnish, if desired.
  4. For marinade:

  5. Stir together all ingredients.
  6. makes 1 1/4 cups

  7. For Chili Butter:

  8. Combine ingredients.
