Ginger Scallion Noodles

Serves 4 people

Ingredients

  • 6 oz. ramen noodles (or lo mien, rice noodles or Shanghai thick noodles)
  • 6 Tbsp. Ginger Scallion Sauce
  • 1/4 cup desired add-ins such as sliced bamboo shoots, quick-pickled cucumbers or any other vegetables you have on hand
  • Ginger Scallion Sauce:
  • 1/2 cup finely chopped fresh ginger
  • 1/4 cup grapeseed or other neutral oil
  • 1 1/2 tsp. soy sauce
  • 3/4 tsp. sherry vinegar
  • 3/4 tsp. kosher salt

Directions

  1. Bring a pot of salted water to a boil. Stir in noodles. Cook until tender. Drain.
  2. heat drained noodles in a bowl. Spoon on ginger scallion sauce. Add a heap or two of vegetables, if you like.
  3. For Ginger Scallion Sauce:

  4. Toss together all ingredients. Let rest 15 minutes. Toss again just before serving. Keeps nicely in the fridge.
