Grouper Fingers

Ingredients

  • 1 lb. grouper
  • 2 large eggs, lightly beaten
  • 18 saltines, crushed
  • canola oil
  • 1/4 tsp. salt

Directions

  1. Cut fish into 5 × 1/2-inch strips. Dip in egg, and dredge in saltine cracker crumbs.
  2. Pour oil to a depth of 1 1/2 inches into a heavy skillet; heat oil to 375 degrees. Fry fish, in batches, 3 minutes on each side. Drain on paper towels, and sprinkle with salt.
