Hangover Soup

Chef says this is traditional Hungarian hangover cure. Served in shot glass size doses. or bowls if needed.

Ingredients

  • 1 lb. sauerkraut with liquid
  • 3 1/2 Tbsp. packed dark brown sugar, divided use
  • 1 928 oz.) can crushed tomatoes with liquid
  • salt and ground black pepper

Directions

  1. Combine the sauerkraut, its liquid and 3 Tbsp. of the sugar in soup pot or Dutch oven.
  2. Bring to a simmer on medium heat; simmer 5 minutes. Add the crushed tomatoes and stir to combine. Puree in batches in food processor or blender. Return mixture to pot; add 2 cups water; season to taste with salt and pepper. Bring to boil on high heat; reduce heat and gently simmer, covered, 30 minutes. Stir in the remaining brown sugar and cook uncovered, 1 to 2 minutes.
