Oatmeal- Applesauce Muffins

Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup rolled oats
  • 1/4 cup firmly packed brown sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. freshly grated nutmeg
  • 1/4 tsp. salt
  • 1 cup homemade applesauce OR unsweetened "natural" applesauce
  • 1 (5oz.) can evaporated milk
  • 1/2 tsp. freshly grated ginger
  • 1 egg
  • 3 Tbsp. vegetable oil

Directions

  1. Heat oven to 450 degrees. Lightly grease 12 to 14 standard-size muffin cups, or line with paper liners. Set aside.
  2. In a large mixing bowl, whisk together the flour, oats, brown sugar, baking powder, baking soda, cinnamon, nutmeg and salt. Make a well in the center and set aside.
  3. In a second medium bowl, combine the applesauce, evaporated milk, ginger, egg and oil; beat until smooth. Pour mixture into the well in the dry ingredients and stir just until mixed Some specks of dry flour should remain
  4. visible in the batter.

  5. Spoon batter into the prepared muffin cups, filling each cup approximately 2/3 full. Bake on center rack 20 to 25 minutes or until muffins are golden and tops are springy.
  6. Serve warm with butter spple butter or honey.
  7. makes 12 to 14 muffins

  8. Note: If you prefer sweet muffins, increase sugar to 1/2 to 3/4 cup.
