Artichoke Stuffed New Potatoes

Ingredients

  • 16 tiny new potatoes (1 1/2 - 2 inch diameter)
  • 1 Tbsp olive oil
  • 14 oz can of artichokes
  • 1/2 cup light mayonnaise dressing or salad dressing
  • 1/4 cup shredded parmesan cheese
  • Dash of ground red pepper
  • 1/4 cup fresh parsley
  • 2 cloves garlic, minced
  • 2 Tbsp lemon peel

Directions

  1. Cut off top one-third of potato and hollow out leaving ¼” on shell. Cut thin slice off of bottom. Lightly brush potatoes with oil and place in baking pan.

  2. Combine artichoke hearts mayonnaise dressing, cheese, and red pepper. Spoon into potatoes. Bake for 20 minutes at 450˚. Meanwhile, combine parsley, garlic, lemon peel. Sprinkle over potatoes after baked.
