Bacon-Cranberry Brussel Sprouts

my favorite way to eat Brussel Sprouts

Ingredients

  • 5 slices of bacon; chopped
  • 2 tablespoons veggie oil
  • 1 large onion; chopped
  • 1 tablespoon fresh thyme leaves; chopped (about 4 sprigs)
  • salt and pepper
  • 2 - 10 oz. boxes of frozen brussels sprouts - thawed
  • 1/2 cup dried cranberries
  • 1/4 cup chicken stock or broth

Directions

  1. Pre-heat a nonstick skillet over medium-high heat with 2 tablespoons of veggie oil. Add the backon and cook until crispy, about 2-3 minutes.

  2. Add the onions and thyme, season with salt and pepper.

  3. Cook for 3-5 more minutes.

  4. Add brussels sprouts to bacon and onions, toss and stir.

  5. Add the dried cranberrries and the chicken stock and cook for 3-4 minutes. (or until cranberries are plump)
