Peppermint Candy Cookies

This recipe came from mom but I don’t like Peppermint.

Ingredients

  • 1 C. butter or margarine, softened
  • 1/2 C. sifted powdered sugar
  • 2 C. flour
  • 1/2 C. finely chopped walnuts
  • 1 tsp. Vanilla extract
  • 1/4 c. plus 2 T sifted powdered sugar
  • 2 T. cream cheese, softened
  • 1/2 C. sifted powdered sugar
  • 1 tsp. milk

Directions

  1. Cream butter; gradually add ½ c. pwd sugar, beating at medium speed of an electric mixer until light and fluffy.

  2. Add flour, beating until smooth; stir in walnuts and vanilla. Cover and chill.

  3. Combine peppermint candy and ¼ c. plus 2T pwd sugar; mix well. Set aside.

  4. Combine cream cheese and remaining ingredients; stir in 3T peppermint candy mixture.

  5. Shape dough into 1-inch balls; press thumb in each cookie leaving an indentation.

  6. Spoon about ¼ tsp. cream cheese mixture into each cookie’s indentation. Gently pinch edges together to seal.

  7. Place cookies about 1 in. apart on ungreased cookie sheets. Bake at 350F for 12-15 minutes.

  8. Transfer to wire rack to cool slightly.

  9. Roll cookies in remaining peppermint candy mixture and cool completely on wire racks. Note: these cookies are fragile; do not increase size.
