Lemon Couscous

Ingredients

  • 2 (5.4 oz.) pkg. toasted pinenut couscous mix
  • 2 cups fat-free reduced-sodium chicken broth
  • 1 Tbsp. grated lemon rind
  • 1/3 cup fresh lemon juice
  • 2 tsp. butter or margarine
  • 2 Tbsp. chopped fresh parsley
  • 1/3 diced red bell pepper

Directions

  1. Remove seasoning packet from couscous package.
  2. Combine broth, next 3 ingredients, and seasoning packet in a medium saucepan; bring to a boil over medium-high heat. Stir in couscous; cover, remove from heat, and let stand 10 minutes. Stir in parsley and bell pepper.
  3. makes 6 cups
