Shrimp and Bacon in Barbecue Tomato Sauce

Ingredients

  • 1 1/4 lbs. frozen uncooked peeled and deveined medium shrimp, thawed
  • 2 tsp. barbecue seasoning
  • 6 slices thick bacon, cut into 1-inch pieces
  • 1 (10 3/4 oz.) can Campbell's Condensed Tomato Soup
  • 3 Tbsp. honey
  • 2 Tbsp. cider vinegar
  • Toasted baguette slices or crackers

Directions

  1. Pat dry shrimp on paper towels. Toss with barbecue seasoning in a bowl.
  2. Cook bacon until crisp in a large skillet over medium-high heat. Drain bacon on paper towels.
  3. Reserve 1 Tbsp. drippings in skillet; add shrimp and sauté 3 to 4 minutes or until firm and pink.
  4. Pour tomato soup, honey, vinegar, and bacon into skillet; bring to a simmer, stirring constantly. Simmer 30 seconds. Serve with toasted baguette slices or crackers.
