Persian Rice Pilaf

Ingredients

  • 2 tbsp. butter or margarine
  • 1 small onion chopped
  • 1/2 cup slivered almonds
  • 1 1/2 cups uncooked basmati rice
  • 1/2 cup golden raisins
  • 1 1/2 tsp. ground turmeric
  • 1/4 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 3 cups chicken broth

Directions

  1. Melt butter inn a skillet over medium-high heat; add onion and almonds, and sauté 7 minutes or until onion is tender and almonds are golden.
  2. Stir in rice and next 4 ingredients;
  3. sauté 2 minutes. Add broth, and bring to a boil; cover, reduce heat, and simmer 20 to 25 minutes or until rice is tender.

  4. makes 6 cups
